Questions, briefly.

Can a slot group hold more than one item?

Yes. A group asks for any number of picks, and the Quantity list layout allows repeats of the same item.

Can shoppers change the set later?

Yes. Edit set in the Luxe cart drawer reopens the builder with their picks kept, and the price is worked out again.

What if JavaScript is blocked?

A plain form adds the default picks at the set price, so the set still sells.

Do I need to edit my theme's code?

No. Luxe adds app blocks and one app embed in the theme editor, never edits your theme's code, and removing Luxe leaves your theme as it was.
